1. In a small saucepan heat water until boiling. Add couscous, raisins, peas, apple, red onion, and curry powder. Remove from heat. Stir once. Cover and let sit for about 6 minutes or until couscous is cooked through.

2. In a small bowl, whisk together olive oil, garlic, orange juice, orange zest, parsley, and mint.

3. When couscous is done, transfer to a bowl and let cool for 5 to 10 minutes. Pour on dressing and gently toss to mix. Salad can be eaten warm or cold.

Variation: Almost any combination of dried fruit (dried cherries, cranberries, or dates, for instance) and fresh fruit (try oranges, strawberries, or peaches) will work in this salad. To make it a main dish, mix in 1 cup cooked beans such as chickpeas, kidney beans, or white beans or 1 cup cooked chicken or pork.
